Ground Beef - share with me your favorite recipes using it!

We buy our beef in bulk - and by bulk I mean, we buy a half of a cow directly from the farmer who raised it! It costs a lot up front but in the end we end up saving a TON!!!! I was just taking a roast out of the freezer to thaw for dinner tonight and I realized how much ground beef we have left. Compared to the other cuts of meat, we have A TON of ground beef!!!! So you can expect to start seeing a lot of recipes with ground beef on here. But I could use some help!!

Hi... thanks so much for visiting We Don't Have It All Together this morning! I am following you now. I am looking forward to reading the responses here - I always need new ideas for beef. I have been wanting to buy a 1/2 of a cow for a long time now... one of these days I guess. At least that way, I know I can trust the meat if I trust the farmer.

Microwave Taco Burgers

These are so quick, easy and tasty!! One of my kids' favorites!

1 lb ground beef
1 1/4 package mild taco mix
2 Tbsp mild salsa
4 sandwich buns
4 tomato slices
1 cup chopped lettuce
1 cup sour cream (if desired)

In microwave bowl, combine ground beef, taco mix and salsa; mix well, shape into 4 patties. Place on plate, cover with wax paper. Microwave 5-7 minutes or until desired doneness, turning and rearranging patties after 3 minutes. Let stand 2-3 minutes. Place a patty on bottom half of each bun. Top each with a tomatoe slice, 1/4 cup of lettuce and sour cream. Cover each with top half of bun.

We eat a moderate amount of hamburger: Tacos;meatloaf;stuffed burgers with gorgonzola cheese;stuffed burgers with cheese, tomato and onion; blah, blah, blah!

We do the same thing every year, buy a half cow and a pig. This year I think we only got a quarter cow, too much hamburger! We use it up in spaghetti sauce, chili, meat-loaf (my kids love it), burritos, hamburgers on the grill.
